FISH CHOWDER

 

16 oz. grouper or any good fish fillet

2 T vegetable oil

1 onion chopped

1-1/2 t. fresh chopped garlic

2 lbs. peeled chopped tomatoes (canned is fine)

dash of basil, thyme, oregano, salt and pepper

 

Heat oil in a sauce pan. Glace chopped onions and garlic until milky in color. Add tomatoes, salt, pepper and herbs. Boil for about 15 minutes

 

Dice fish into 3/4 inch size. Add to the sauce and boil for another 10 minutes. Serve in a soup bowl and garnish with a leaf of fresh sage or some parsley. For 4 persons.
